Time is the ingredient

Every oud house shows you a tree and quotes a number. Sixty years. A hundred. It photographs well and it means very little, because a tree's age tells you almost nothing about what comes out of the still. What matters is resin. How long the tree carried its infection, how far the darkness travelled through the heartwood, how much of that wood is worth cutting at all. A young tree with decades of established resin outperforms an old one wounded last season, every time. We wont just yet tell you how much this one gave us. We'll tell you what it smells like when it's off the still and rested. Until then, a photograph and no numbers.
